Super Easy, Delicious Falafel Ball Recipe

I am not a very fancy cook, I admit it. I don't cook that much (and I really prefer baking), so I love finding recipes that are very simple, yummy, and healthy. I started making these babies a couple years ago and they are just soooo good!

Plus, chickpeas are SO good for you!

Chickpeas are super high in fibre (therefore they keep you regular). As well as being really good for people with diabetes as fibre lowers blood glucose levels & improves insulin levels. 

They're also beneficial for heart health, bone health, reducing inflammation, minimizing cancer risks, lowering blood pressure, AND they contain that awesome natural folate! So these will be very good for pregnant women. 

All the flavours and spices included in this recipe are also quite healthy and they have their own benefits like reducing inflammation, preventing illnesses, etc. 

These balls make a super yummy snack or meal. I like dipping them in hummus (which is basically chickpea-cannibalism), and having them with cherry tomatoes and pickles. Nom nom nom.

Falafel Ball Recipe

-1 cup dried chickpeas
-1/2 large onion, roughly chopped (1 cup)
-2 tbsp finely chopped parsley (or flakes)
-2 tbsp finely chopped cilantro
-1 tsp salt
-1/2-1 tsp dried red hot pepper
-4 cloves garlic
-1 tsp cumin
-1 tsp baking powder
-4-6 tbsp flour

In a food processor mix chickpeas & onions. Add parsley, cilantro, salt, hot pepper, garlic and cumin. Process until blended but not pureed.

Sprinkle in baking powder & 4 tbsp flour. Pulse. Add enough flour so dough no longer sticks to hands. Refrigerate for a of couple hours.

Heat oven to 375˚. Grease baking sheet with olive oil. Roll dough into balls. Brush tops with olive oil. Bake until golden brown, about 10-15 minutes on each side.
