Glorious Granola!

Today I had the day off and I felt like making some granola. And now I feel like sharing that recipe with all of you! Awesome!

I love baking, and making yummy food (I even went to college for it!), so if I get the urge to create, I will!

Granola is actually super easy and fun to make. It doesn't take long at all and it's so rewarding because, if you double the recipe like me, you're left with three whole mason jars full that'll last you a while! Plus it's pretty damn healthy if you use the right stuff.

So today, on this rainy Monday with the house to myself (for possibly the last time before I move!), I put on some Vampire Weekend and made granola. 

Recipe

-2 cups old-fashioned rolled oats (not quick oats)

-2 cups almonds, chopped (or other nut)

-1/4 cup seeds (pumpkin, sunflower, etc.)

-1/2 cup dried fruit (raisins, cranberries, etc.)

Mix together in large bowl

Add:

-3 tbsp maple syrup (or honey, agave)

-2 tbsp coconut oil

-1/2 tsp vanilla extract

-2 pinches of salt

-dash of cinnamon

Mix together with hands. Spread out on parchment lined baking sheet. 

Bake at 325˚ for 25-30 mins, mixing the mixture 2 or 3 times.

So simple and so delicious. Enjoy!
